Pancake Mix Muffins

If there are any of you out there that are reading this and we’re affected by Hurricane Ida, my heart and prayers go out to you! We got back a few days ago from having extended our family beach vacation in Panama City Beach, FL because my husband who works in New Orleans was given orders to evacuate. Being practically neighbors to that area, we felt it was smarter to extend our stay until the storm passed. Thank God we got nothing more than flooded streets in our neighborhood (which apparently hadn’t happened since Hurricane Katrina!), but by the time we came home all had drained away and we never would have known if our neighbor hadn’t shown us pictures.

All that to say that when we got home we had nothing to eat except the stuff we have on hand for emergencies. So I put on my thinking cap and decided to come up with these Pancake Mix Muffins. Sure, they aren’t my usual healthy recipe, but they are easy and they were a hit! Even my son who doesn’t like pancakes, loved them!

But before I share the recipe, I wanted to quickly talk about what I have been doing lately to add to my crazy chaotic life: starting online fitness training. I’ve mentioned before how I LOVE fitness, how it is my go to therapy on rough days and how I am currently training for an obstacle course race in November. Despite the fact that I have my degrees in culinary and hospitality, I always originally wanted to go into health and nutrition. That passion never left me, but I thought I couldn’t effectively teach or train someone else. God was funny because here I am now teaching three kids and half the time I wonder how I can teach them so naturally, and love it! So I took the plunge and am getting my personal trainer certification and putting my years and years of knowledge towards training others. My sister, Anita here, has been trying me out and thus far claims to like it 😉 My goal is to help other moms (and dads) find time for themselves, using whatever equipment they have at home and building a program that they can do in their time frame. One thing I’ve learned is this: NOT taking care of our health is one of the top reasons why we have so many health issues in this world. And with things becoming so modernized, it has made us less active. So we must learn to love ourselves and keep ourselves healthy so we can live longer, happier, and healthier lives. And what better example for our children when their growing years is when these healthy habits need to be installed so they can grow up to be healthy adults?!

With that said, here is my less than healthy Pancake Mix Muffins! Haha! BUT I will say this, try this with ANY pancake mix you have, or find one of those that are made from whole grains or gluten free. I used your basic, just add water, pancake mix.

Pancake Mix Muffins

1 1/2 cup pancake mix of choice

1/2 cup sugar

1 1/4 cup water

optional: add sprinkles, chocolate chips, berries, etc…

  1. Preheat oven to 350 degrees
  2. Line a muffin tin with cupcake liners
  3. Mix all ingredients with any optional add ins
  4. pour into muffin tin
  5. Bake for 15 min or until tooth pick comes out clean
  6. Enjoy!!!!
