Light A Fire
We all have those days when we would rather open up a frozen pizza or store bought something due to time and exhaustion. I speak from experience since, as much as I love to bake and cook, time never seems to be something I have enough of. And then I am presented with a brief moment of time to be alone in the kitchen, and I’m short on ingredients due to needing to go to the grocery store!
So I came across this box of protein muffin mix that I intended to make for my girls. They LOVE chocolate chip muffins! I looked on the box at the ingredients, and I had them all. Only one problem: it seemed bland and boring. So what did I do? Switched up the ingredients equally (well, almost). For the water I used almond milk. For the oil I used bananas. And I kept the eggs (but I could have made flax or chia eggs instead and I am sure that would have worked too. Maybe next time…) and I added some extra semi sweet chocolate chips.
And done!
Quick and easy. And the girls enjoyed them with some peanut butter on top!
Get creative when you have a boxed mix of some sort. Making some tweaks here and there can make them “healthier” or more flavorful and more homemade like.
Boxed Muffins
1 box protein muffin mix (I used the brand that is pictured above)
3/4 cup almond milk
1 very large ripe banana
3 eggs
1/4 cup chocolate chips
