Let’s talk raw cookie dough. Who of you love to bake cookies, just so you can eat spoonfuls of the raw stuff and not care much about the actual cookie? Just me? That’s fine! Ha! Does it bring back memories of slumber parties and eating straight from that pillsbury dough already made tube of cookie dough while laughing and watching movies? It definitely does for me. BUT this stuff is actually good for you! How you may ask? Because the base is chickpeas! Followed by oatmeal and my favorite ingredient: peanut butter! When I want to sneak some beans into my kids diet, this is the way I do it. And they request it! Seriously it’s awesome! Give it a try!! Could you bake cookies out of it? Honestly I have no idea because it’s never made it that far.
Raw Chocolate Chip Cookie Dough
1 can, drained and rinsed, chickpeas
1/4 cup peanut butter (the runnier and creamier the better)
1/4 cup raw oats
1/4 tsp baking powder
1/4 tsp cinnamon
1/4 tsp salt
1/4 cup honey
1 Tbsp vanilla
1/3 cup chocolate chips
