I have to say, it has been one crazy week! I scheduled week long breaks after every 6 weeks of homeschool so I can sit, catch my breath and try to figure out what has worked, what hasn’t and refine my routine and schedule with the kids. Sounds like it would also be a much needed break, but it wasn’t!
Everything I had put off for the past two months was still waiting and begging to be taken care of. My brain wanted to explode as I sat and poured over all the material I had and wondered how my kids have learned anything the past two months. And yet, my five year old surprised me this week by picking easy reader books she hadn’t seen before and was able to read parts of it on her own. My son showed us an experiment that he had learned on TV, and they have also spent a ton of time outdoors playing in their world of imagination. So I guess you could say I’m not doing too bad!
The only downside to all this was that I had a quilt order I was working on. That’s not the bad part. The bad part was my sewing machine jammed up one night in the middle of me working on it. And if you read my post on what takes my stress away, you’ll know that sitting and sewing is one of those stress relievers. Not that night. I took the machine apart, cleaned it, oiled it, put it back together (thanks dad for your engineering mind..) and still nothing. Like concrete! It was toast, which meant putting the project on hold, ordering a new machine and pushing back my plans of having it done by next week. Which, after the chaos of this week, it was actually God’s way of helping lessen my load. So I’m glad for that. It’s all in perspective.
So, with this crazy week, I relied on very simple meals for myself. Not only simple, but also comfort foods. Enter in the classic peanut butter and jelly with an adult twist. I LOVE apples and peanut butter. In fact, I love peanut butter anything. And as I gotten older, when I want a PBJ, I choose good quality bread and some sort of fruit. It makes the sandwich healthier and you don’t have to use jelly. Although, depending on the fruit I use, I will sometimes add a drizzle of raw local honey. So it may not be a fancy recipe, but it was my go to this week, and one your kids do themselves (but you may want to slice the apple for them!). If you have never had fruit in your sandwich, I suggest you give it a try!
APPLE PEANUT BUTTER SANDWICH
2 slices of whole grain bread (my favorite brand is Dave’s Killer Bread or Ezekial)
1-2 Tablespoons peanut butter (or any nut butter of choice)
1/2 apple thinly sliced
if desired: a sprinkle of cinnamon and a drizzle of honey
